I love a dipped ice-cream cone on a hot summer day…that is until I fail miserably at eating it before it begins to melt all over me.

Better yet, way back in the day when I entered the workforce as an icecream scooper…we used to make and sell yummy frozen chocolate covered bananas on a stick.

Well, the other day I stumbled on yet another thing to try with coconut oil…and forgive me, I don’t remember where I even saw this…but basically it said it was super easy to make your own magic shell…and you know I had to try!

I simply heated coconut oil and chocolate chips on the stove. I used 1 part coconut oil to a little over 1 part chocolate chips. I melted the coconut oil first on low and then added the chocolate chips and stirred. Once melted, I let it cool off before pouring over my ice-cream. Next time I’m going to add a touch of sea salt and a bit of caramel to see how that goes!

I mean, if you used dark chocolate…wouldn’t this recipe be sorta good for you?!

I can see experimenting with white chocolate and different flavorings too! Oh the possibilities are endless! Forget bananas on a stick, I’m thinking homemade nutty buddies, homemade icecream pops…oh my!

It’s been a busy past couple of months. I have barely opened the computer the past 6 weeks! I finished orientation at work which means that the full-time schedule I was on has dropped to my permanent (mostly) part-time schedule. I’m happy to say that I’m adjusting back to night shift well: Two 12 hour nights a week is much easier than three. I was not born a night owl but really loving my job-that helps! These days, the little man is sleeping through the night beautifully and we have our house just about ready to put on the market. I’m sure gonna miss this place when it’s time to leave-but that’s a subject for another day…

In mid-March, Philip asked me to make some muffins. Using what I had on hand, I followed a recipe I had for banana blueberry muffins. Since, I’ve been tweaking the recipe to make it a little more healthy. Each batch, I’ve substituted something for something more healthy. Philip has been the judge (…and he’s brutally honest). Did I mention that these are incredibly moist?! Here’s my recipe thus far:

Ingredients:

3 large ripe bananas

3/4 cup honey (instead of sugar)

1 Tbsp. chia seeds soaked in 2-3 Tbsp of water for approx 3 minutes (instead of 1 egg)

1/3 cup melted coconut oil (instead of butter)

1 cup blueberries

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1 1/2 cups flour

Directions:

1. Mash the bananas in a large bowl.

2. Add honey and chia “glue”.

3. Add coconut oil and blueberries.

4. Combine dry ingredients and mix in another bowl.

5. Add mixed dry ingredients to the banana mixture.

6. Pour into 12 well greased or lined muffin cups.

7. Bake at 375 degrees for 20 minutes.

8. Have one while they’re warm or you’ll regret it later!

Next time I would like to use a healthier substitute for plain old flour…suggestions anyone?

On a side-note: Future-parents…don’t get rid of all of your toys! I’m thankful that I kept a box of stuff but I told my parents to get rid of all of my toys and books as a teenager who was not thinking…and it kinda breaks my heart! Luke met my first baby boy today, Marky. They chatted it up for a while…now they’re best friends!

Shew, it has been a bit crazy lately!

I feel like I have been too busy to keep up with anything going on let alone find time to sit down and write!

Last week, Philip was out of town for work. That was my second week of night shifts and I am so thankful that they allowed my orientation schedule at work to be tweaked to accommodate our family.

The Sunday before Philip left, Luke started sitting and was transitioning from his rolling around to the army crawl. By the time Philip got home, just one week later, Luke is now working on his real crawl at times, but mostly pulling up on everything he can and trying to …cruise.

To add more fun to the mix, last week the little guy decided that he no longer was interested in eating all of the yummy stuff I was making for him. Literally throwing a fit, arching, blowing raspberries, yelling when I put a spoon by his mouth. Because weight has been a problem…this was a concern for me.

The solution? Moving on to foods he can feed himself. Already…

(It has been a joke between my MIL and I that Luke never wanted to be a baby…)

It seems I have one determined-to-be-independent ‘lil man here! Anyone else’s kid do this at 7 months old???

Granted it’s messy but he is only interested in eating if he can help.

I am going to check out the Baby Led Weaning books because it seems this is where I need to go with him. If he wants to feed himself, fine by me!

Besides the fun transitions, we have been laying low with a nasty cold the past couple of days which has only added to the eating drama…and slightly stalled our progress on sleeping through the night…

Some Ramblings and Thankful Today part 3

Week 1 of night shift is behind me and all is going well. Right now orientation is full time but in a few short weeks, I will drop down to two nights a week. In the meantime, I’m just truckin’ along and trying to figure out a routine. That old, “my home is clean enough to be healthy and messy enough to be happy,” motto is definitely mine for this time!

I really used to hate night shift…the way it made me feel so tired and run down but these days I see it in a whole different light. I can work while the baby sleeps and catch a quick nap the next day…so it ends up being less time away from him. It’s funny how much less you value sleep as a mom…

The hard part about night shifts is what Philip goes through with Luke. Luke knows his mommy is gone at night and the truth is, there were many nights he ended up in bed with me. At first it was out of sheer exhaustion…a way to get him to stop crying when he was colicky and then just because it was so stinkin’ sweet to have him right next to us. (Yea, Philip is just as much of a sucker as I am…)

Now, I’m working on transitioning him totally to his crib. He naps in there fabulously but nights is a different story. Because I know he is having less of an issue with his reflux, and his daddy had to survive on very little sleep last week when I worked, my focus this week has been on Luke spending the whole night in the crib.

The past couple of days I went in to find him crying and sitting there with his legs dangling between the crib slats and his little hands clasping the slats like he’s in a jail cell. It’s pretty pitiful…he knows how to tug on the heart strings. Tonight though, we are doing better and the classic butt pat is actually all it is taking to soothe him.
